Creation of life and the process of Samudra Manthan. What is the astrological significance of this story? How and why Rahu and Ketu are created during this process?

Throughout history, almost all spiritual gurus have mentioned about 'Maya' of this living world and how people are deeply attached to illusion. Maya is derived from two words, 'Ma' (not) and 'Ya' (what is). Thus, Maya ultimately points toward an illusion or 'what is not. Lord Sri Krishna explains how Maya deludes humans through verses in Bhagavad Gita, chapter 7.
The ultimate truth about this vast Universe or multiverse and life in this world is beyond the limits of human imagination. It is a common sense fact that science will never be able to decrypt the secret of life and the mystery of our Universe. Starting from the Satya yuga, we humans are getting closer to Maya, and this Kali-yuga, which is the last, becomes the ultimate playground of Rahu or Kali or, in other words, the energy of Maya and illusions. So what exactly are Rahu and Ketu? We know that these are not actual planets in the Zodiac. They are just mathematically calculated points in the Zodiac. -
The churning of the cosmic ocean, known as Samudra-Manthan in Hindu mythology, is associated with the act of creating or replenishing the Universe. During the churning process, every component or term that is addressed reflects or symbolizes something in relation to the creation of life. Vasuki, the serpent king, served as the churning rope during this Manthan. While the gods held Vasuki's tail, the Asuras or demons held the head. The tail (Ketu) denotes following, devotion, Soul (eternity), and humility, whereas the head (Rahu) represents pride, desire, thinking, and life. After the push-pull between the tail and the head, creation (the result of heavenly nectar or Amrut) occurs. 
There is another event happening just after the outcome of Amrut, which is an important event symbolizing our life. It is the creation of Rahu and Ketu, the shadow planets. A demon named Swarbhanu impersonates one of the Devas and consumes Amrut. The Sun and the Moon gods informed the cunningness of Swarbhanu.  Realizing this deceitful act, Lord Vishnu sends his Sudharshana and cuts off the head of Swarbhanu. Later, out of hatred toward Sun and Moon, Rahu starts 'grahan' or eclipsing Sun and Moon. Since Rahu has already consumed the Amrut, he lives without the body and Ketu without a head.
What precisely this event symbolizes?. Human is life or Amrut here, and it was consumed by Rahu or the desire or materialistic thoughts or head. Later the tail part was detached from the body and stayed 180 degrees opposite it. Sun and Moon in astrology represent Soul and mind, respectively. Rahu, the planet of worldly desire, periodically consumes (eclipses) Soul and mind. All these events point to one character about Rahu: its thirst for everything and eagerness to hide or put in darkness or impersonate goodness (deva). Since Rahu consumes the Amrut or life, we humans are becoming submissive to this materialistic desire and illusions of Rahu.
In astrology, the Sapta Graha, or seven genuine planets, symbolizes a person's life and character. Every planet is under the power of Rahu and Ketu's mysterious influence. For instance, a person with a negatively impacted Saturn may be indolent, unfair, and prejudiced. Saturn, on the other hand, has a beneficial influence on those born under its positive influence; they will be hardworking, honest, humble, and just.
Every person is drawn to Maya or materialism and pulled to spirituality, detachment or reality at some point in their lives. Success as real beings on this planet depends on our ability to maintain equilibrium in the face of this constant push and pull.
